Purple Haze Cookies: A Healthy Twist on the Classic Carrot Cake
Ingredients:
1 cup oat flour
1/2 cup almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/4 cup honey
1/4 cup maple syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 cup grated purple carrots (using a food processor)
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine the oat, almond and coconut flour, baking powder, baking soda, cinnamon, cardamom, and salt. Mix well to combine.
In a separate bowl, whisk together the honey, maple syrup, melted coconut oil, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and mix until a dough forms.
Fold in the grated purple carrots until evenly distributed throughout the dough. If desired, add chopped walnuts or raisins and mix until incorporated.
Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them slightly apart. Use your fingers or the back of a spoon to gently flatten each cookie.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
