Ingredients:
- Mangos (125 g)
- Banana 1
- Passion Fruit 2
- Water 4 tbsp
- Almond flour 1/2 cup
- Eggs 1 medium
- Oil 1 tsp
Instructions
1. Cube the mango
2. Put the cubed mango, and passion fruit flesh in a saucedpan and add the water. Heat for 10 minutes on low het until fruit is softened. Stir frequently. Put the fruit aside and let it cool.
3. In the meantime, mix the almond flour, the ripe banana and egg in the blender or food processor until smooth.
4. Heat the oil in a large non-stick pan scoop 6 pieces of batter into the pan with a tablesppon.
5. Fry the pancakes for about 3 minutes until browned and done on both sides. Turn them carefully as the batter is not very firm.
6. Serve with the fruit spread made earlier in step 2.
